Ok So last night I was inspired to make a pizza that was both healthy as well as delicious. Here's the recipe I created:
Ingredients:
1 lb Pizza Dough rolled thin.
1/2 cup Shiitake Mushrooms sliced thin
1 Romano Tomato sliced thin
1/2 cup shallot sliced thin
1/2 cup of ricotta cheese
1 bunch of Fresh Basil cut into strips
The best Olive Oil you can find.
Salt
Preparation -
1 - Place rolled pizza dough on a baking sheet that has been dusted with flour. Perforate with a fork and sprinkle with olive Oil.
2 - Bake at 450
3 - While it's baking take the ricotta cheese and some of the basil. Add about 1/2 a teaspoon of salt and mix well.
3 - Remove dough from oven as it turns a light brown color.
4 - Lay tomatoes on the crust followed by the Shiitake Mushrooms and shallots. Crumble the Ricotta on top of everything.
5 - Bake until the crust turns dark and the other ingredients have cooked through.
6 - Remove from the oven. Grind some salt on top to taste and put the rest of your fresh basil on top. Sprinkle with some more olive oil.
7 - Let sit a few minutes before slicing. Serve immediately.
TIPS:
1 - It's ok to have a pizza that isn't round.
2 - "ready-dough" can be purchased frozen at the grocery store or you can go to your favorite pizza joint and buy raw dough.
3 - You don't need sauce to make a pizza taste good. Let the ingredients you use speak for themselves.
4 - Replace shiitake Mushrooms with asparagus and add prosciutto. (thanks T-pain for the idea)
